‘Great gin doesn’t just make itself,’ says Four Pillars, which started its spirit-filled dreams back in 2013. The company, which was among the first wave of craft distillers to produce a gin in Australia, spent several years running tests and building recipes before ordering a custom-built still from Carol of Germany.
The brainchild of winemaking and marketing duo Stuart Gregor and Cameron Mackenzie, along with brand guru Matt Jones, had one core objective: to make the best Australian craft spirits possible.
The distillery is based in the Yarra Valley and was crowdfunded. The lads smashed their initial A$100,000 target (roughly £55,000) two days after its launch. They now produce five different gins.
